Wagyu beef oxtail (Originally cut from an ox) is a fatty meat that is ideal for braises, soups, and stock. This culinary delight has a deep rich flavor and is tender when cooked low and slow. The tail is skinned and cut into sections, each of which has a section of tailbone with marrow in the middle and a chunk of meat around the outside.Â
These are whole beef oxtails, very nicely cleaned and "ready" to cook. You can cut them raw, just bend it to see where the vertebrae meet and cut through the joint with a paring knife.
